Our aim is to find and work with the best ingredients available.
Maximising on flavour, we hope to create and surprise our diners in new, different ways.
By adding another stroke to the kanji white 白 it becomes the kanji for one hundred 百.
For our aim is to try ensure our customers enjoy their evening with us 100%.
2014年11月 炭火割烹 白坂をOPENする。
Hideki Ii was born in Tokyo in 1976 and grew up in a family that ran a Chinese restaurant.
He began his culinary career at the age of 18 in 1994 at a Japanese restaurant before going on to work in several different kitchens in Tokyo.
This was when he met world renowned Chef Tetsuya Wakuda of “Tetsuya’s” and was recruited to work there with him in Sydney in 2004 to further broaden his experience.
Under his guidance, he worked there as a Senior Sous Chef.
Afterwards he went to U.S.A as the Executive Chef of the United Nations ambassador residence in New York.
There he was in charge of organizing all menu preparation and execution of food and beverages.
After serving his time under the United Nations, he returned to Tokyo in 2013 and a year later he opened his first restaurant in Akasaka, Tokyo, called “Shirosaka,” a Japanese fine dining restaurant specializing in charcoal grilled dishes, which serves a set course menu together with particular wine and sake pairings. Aside from which, he was also admitted into the Japanese Sommelier Association in 2015.
